The Sommelier, or wine steward, develops and maintains the wine cellar and recommends the proper bottle for each course and dish. The Maitre ‘D is the first to greet his guests, the last to say good-bye, and throughout ensures that service is efficient yet obtrusive. Finally, the Chef, the most artistic of all, whose subtle, creative or daring creations are the raison d'etre of the entire enterprise.
